Easy Recipes For 2 Splendid Puddings!

We know how busy things can get in life, and there are lots of options to save the time and hassle to make a dessert for your family by just ordering from a famous local pudding store! Yet making something for the people you love, with love has it's special appeal. So we've managed two very easy pudding recipes which can serve sensational treats if followed just right. The followings are simple puddings you could try making at home. 


Christmas Plum Pudding Recipe



Ingredients



250g butter, chopped
4 eggs
1 cup brandy
1 cup fresh white bread crumbs
750g mixed fruit
1 cup plain flour
1/2 teaspoon ground cinnamon
1/2 cup silvered almonds
1/2 cup chopped pitted prunes
1/2 teaspoon ground nutmeg
3/4 cup chopped dates
1 teaspoon ground mixed spice
1 cup brown sugar
1/2 teaspoon bicarbonate of soda

Directions


Beat the butter and the sugar until they're light and creamy and then go on to adding the eggs. Add one at a time and beat well after each addition. Add the fruit, brandy, sifted dry ingredients, almonds and breadcrumbs. Mix well.

After you've added the above, it's time to spoon the mixture into 8 2-litre greased cups in pudding basin. Cover the basin with baking paper and secure it tightly with a string. Cover with foil and basin lid.

Place the pudding in a large pan with enough boiling water to come come halfway up side of basin. Cover the pan and simmer for 6 hours making sure that the water level remains constant by adding more boiling water if necessary.

Then, remove the pudding from the water and cool. Cover it and refrigerate until it's ready to be served.

When serving, make sure you re-boil the pudding as above for at least 2 hours and then you can serve with Creme Anglaise if you wish.



Banana Coconut Tapioca Pudding



Ingredients


1 cup (200g) tapioca pearls
1 cup(250ml) water
2 pandn leaves, tied into a knot
2 tablespoons finely grated dark palm sugar
1 tablespoon sesame seeds
1/2 ripe pineapple, peeled
400g can coconut milk
1/2 cup(80g) finely chopped palm sugar
3 just ripe bananas, peeled, thickly sliced
1 tablespoon water, extra
1 mango, peeled, thinly sliced, to serve

Directions


Place the tapioca in a large bowl and cover with cold water. After setting aside for 2 hours, strain through a fine sieve and boil in water for 10 minutes until opaque. Drain well afterwards.

Meanwhile, combine the pandan leaves, sugar, water and milk in a large saucepan over low heat. Stir for 5 minutes until the sugar dissolves and the mixture is heated through. Then add the tapioca and gently stir to combin. Remove from the heat and set aside to cool slightly, Transfer to another bowl, add the banana and add plastic wrap as cover. Place in the fridge to chill.

High heat sugar and water after combining, in a small frying pan. Cook while stirring for 3 minutes, add the sesame seeds and cook for another 3 until the syrup thickens.

Remove the pandan leaves from the tapioca and spoon the tapioca among serving bowls. Top with mango and pineapple slices and serve with sesame syrup drizzled on top.

The texture, core and flavor worth savoring make puddings op the list of desserts. Although most people would pick chocolate puddings over any other kind, the pudding recipes given here don't fall too far behind in taste!
